Gluten is one of the main proteins found in wheat, rye, barley, and spelt offering great taste and texture to these comfort foods. There is a lot of buzz about gluten and its impact on health. Celiac disease is a well known condition that is caused by an obvious intolerance to gluten and requires complete avoidance of foods containing gluten for treatment. Current research indicates that only a small percentage of the population are at risk for celiac disease, however, there may be a much larger percentage of the population that may be sensitive to gluten. Gluten sensitivity can only be detected by a systematic elimination diet of gluten, with improved symptoms confirming sensitivity. So if you are suffering with unresolved symptoms of the digestive tract including IBS type symptoms, GERD, indigestion, bloating, gas, and irregular bowel patterns; see your registered dietitian to rule out potential gluten sensitivity.
